Cacio e pepe butter beans



Empty a tin of butter beans into a frying pan. Although you can rinse these if you prefer, I like to keep the water from the can for some extra flavour and thickness to the sauce.

Add your stock, pepper, salt (if you've not used the water from the can) and a white wine to the sauce and leave to simmer for at least 10 minutes

If using, add you winter greens at this stage. Any cabbage, cavolo nero, kale, or even small chunks of broccoli work to give this dish a bit of colour

At the very end, take off the heat and add in your grated pecorino or parmesan until it starts to blend with the sauce

Serve with crusty bread
