Separate the whites of the eggs from the yolks and set the yolks aside.
Whisk the egg whites until white, light and frothy.
Add the sugar and continue to mix until fluffy, with the mixture peaking and holding its form when the whisks are removed from the mixture.
Add the egg yolks and a pinch of salt, and mix until just combined.
Lightly grease a warm pan with some oil and tip the mixture in, using a spatula to level out the mixture.
Cover with a lid. Watching it rise, let it cook for 5 minutes. Flip and cook for another 3-5 minutes before removing from the heat.
